Cooper’s Hawk Wine Bars in Gilbert

Gilbert is getting its own Cooper’s Hawk location, joining the chain’s Chandler and north Scottsdale locations. The restaurant, wine bar, and bottle shop will open this summer.

LoLo Natural Wine Bar brings a laid-back, friendly vibe to East 6th. Flo’s Wine Bar and Bottle Shop is a casual, laid-back wine bar where guests can relax, play board games, listen to music and chat with friends. The owners are childhood best friends and the space reflects their down-to-earth approach to life. The wine menu features wines by the glass or by the bottle. It also partners with Allday Pizza to serve Neo-New York style pizza by the slice and full pie, along with salad, meatballs and soft serve.

The central bar top is fitted with cassette tapes, and art — including a velvet Elvis painting and a photo of the Sex Pistols in front of a wine store — reflects co-owner Chris French’s love of music. He plans to focus on Arizona, California and Oregon wineries at the new Gilbert location. But he wants to be more flexible and offer the ability to rotate in other bottles from near and far. He calls it “push button bubble service.” It’s the kind of wine experience he thinks Gilbert needs.
